Doesn't it look colorful and delicious?!
I originally got this recipe from a Foods class that I took in high school but I tweaked it a little bit. I don't really follow recipes very well but what I make usually turns out to be delicious.My recipe:
- About 2 cups water
- Sliced carrots
- Sliced celery
- 1 diced small yellow onion
- 1 beef bouillon cube
- 2 cloves of garlic
- basil, oregano, thyme, black pepper, and salt
- 1 pound Italian sausage
- 1 sliced Zucchini
- 1 can red kidney beans, drained
- 1 can diced tomatoes
- Dry Pasta (as much as you desire)
Instructions:
In a skillet brown the sausage and cook thoroughly. In saucepan combine sausage, water, carrots, celery, onion, bouillon, garlic, and spices. Cook until the vegetables are tender. Once vegetables are tender add the last four ingredients and cook until the pasta is tender.
Serve in pretty soup bowl and enjoy.
This recipe is actually very easy, it's just a bit time consuming because of the vegetables, but I find the slicing and cooking very relaxing, plus the finished soup is delicious.
Just as a side note I've been considering going to a Culinary Arts School after I graduate from SUU. I still have a year to go before I really have to make a decision, but for now I'm just considering it as an option later on. I'd like to know what everyone else thinks.

Wow that looks so good it's making my mouth water! Why didn't you invite me over? I voted, but I am torn because I think you should consider going on to get your masters - but DON'T stay at SUU. However, I think you should go to culinary arts school cause you 1. would have to leave the state (I think you should go to Portland) 2. I would totally come visit you out of state and 3. I would love to go to culinary art school with you but we all know I need to finish my bachelors first!!! Side note if you go on to get your masters I would hope that you would leave the state for that also...and where ever you go for that I would also come visit you!!!!!!!!!! One more thing...I think you should add "going on a mission" to your poll....cause I still think you are going to go somewhere french speaking...and they have french culinary art schools..........Heck I'm just a blabbering mess on here!

yes libby you were a blabbering mess on here! I think going to culinary art school would be soooo much fun, I think you'd really enjoy it and be really good at it. I think Libby would really enjoy it also! That's what I always thought she would be good at to!! Then you guys can cook for me!!! You should do something you enjoy not what others want you to do!!1
I used to make minestrone all the time, but yours looks lots yummier than mine.
